Perched high above Port Phillip Bay, Blue Range Estate is a surprising find. The journey involves travelling through the back blocks of Rosebud’s sprawling suburban hinterland, housing estates that scramble up the foothills of Arthur’s Seat in search of that all important bay view. Following the signs, a narrow gravel track winds up the side of the range, and eventually a sea of white net covered vines suggests you have arrived. The winery, with its cosy tasting room and raised platform deck with market umbrellas, is a fine place to fritter away a sunny afternoon with a wine and a snack.
Blue Range is not like the other wineries in the nearby Red Hill wine district. It is unpretentious with very friendly service, a small wine tasting area and an outside dining area. Franc De Cicco and his wife Filomena established the winery 30 years ago. Frank must have been a very industrious man, as he also ran a cheese factory in Coburg, an inner Melbourne suburb of Melbourne. The winery is now run by the Melone family, Cosi, Jo and their four children.
My sister and I often travel up to this winery in the sky to share a light lunch and a bottle of wine, thanks to our obliging chauffeurs! The menu is made up of spuntini, small bites of light Italian style dishes designed to go with the wine. The food is simple and tasty, but I doubt that much of it is house made. It’s cheap and works well with the sensational wines. We ordered the calamari fritti, the arancini, and Tuscan sausage with artichoke, a bottle of the 2009 chardonnay and the sensational vista was free. Other menu offerings include flat breads with various toppings and antipasto platters.
The vineyard produces Pinot Noir, Merlot, Shiraz, Chardonnay and Pinot Grigio. The wine list consisted of aged wines from 2009 to 2010: no youngies on the list at all. The 2009 vintage wines were made by Frank the founder, while some of the 2010 wines were made by a visiting Italian winemaker. I suspect the current grape crops are sold to nearby wineries. It’s a great place to visit if you want to taste an 8-year-old Pinot Noir, which is an exceptionally good drop.

It’s a good idea to do a full wine tasting before you choose a bottle to go with your bites. A tasting puts you in a festive mood and the sommelier or assistant needs to be well-informed and cheery. This young member of the Melone family was the perfect host, with lots of great stories to go with it. His Italian ancestors came from Benevento, the city of witches in Campania. There are some great folkloric legends about this region, a new little Italian nugget for me to explore further.

Bruschetta is a celebration of seasonal ingredients. It could be a simple version with newly pressed olive oil or a summer version with vine – ripened tomatoes. On the surface, it is an uncomplicated Italian antipasto dish and yet it is so often misunderstood and easily stuffed up. The key to good bruschette is the quality of the ingredients.
Let’s start with the pronunciation. I am sure I have posted on this topic before, but as Bruschetta is the most mispronounced culinary term in Australia, with wait staff leading the way, it is worth another go. Phonetically, the word can be divided into three parts: Broo- Skeh- Ta. There is no SHHH sound in the middle, as sche in Italian makes the SKE sound. ( sce or sci makes the shh sound). The next thing to note is that there is a subtlety to the sound of the broo part of the word. American speakers of Italian invariably turn this sound into Brew, whereas the sound is much closer to Brook or lies somewhere between the two. Here’s a little sound bite that might assist:
Next the bread. The best bread to use for this dish is a rustic and fairly dense white bread such as Pane di Casa or Sourdough ( not ciabatta- too holey- and not fluffy French breadsticks). As the word Bruschetta is derived from Bruciare, to burn, and Bruscare ( Roman dialect) to roast over coals, an open charcoal grill or BBQ achieves both these outcomes best, especially if serving simply with garlic, new oil and salt. Many family run trattorie throughout country Sicily and Campania have a small open fire in the wall near the kitchen for cooking alla brace. For the home cook, the nearest version is to use a heavy cast iron ridged grill over a gas flame. Also keep in mind that the size of each bruschetta should not be too large. The diminutive ending –‘etta’- suggests something small and dainty, not a boat-sized toasted thing. Bruschette are not the same as Crostini. Crostini are small rounds of bread baked in olive oil in the oven and are much harder and crunchier.
About the toppings. Bruschetta is a classic example of a dish where less is more. Originally, the dish consisted of bread, oil, and garlic. If you have some new season freshly pressed olive oil on hand, I recommend you go no further, other than rubbing the grilled bread with garlic. In tomato season, a topping of garlic, tomato and maybe a little basil, is just right. This is not a dish for imported winter tomatoes that have sat in storage for eons. I also find hydroponic tomatoes extremely disappointing in flavour. If you are shopping at a farmer’s market, ask how they are grown before buying seasonal tomatoes. If they look completely regular in size with neatly cut stems, chances are they are hydroponically grown. Choose those that have grown organically and in the open air. The best tomatoes to use for this dish are Roma or Egg tomatoes. The flesh on these is much firmer and they are not so wet and seedy. My photos show Rouge de Marmande tomatoes, which are very tasty but a little too mushy for this dish.
Adding other non-Italian things, such as fetta cheese, is a real distraction from the simplicity of this dish. Australian cafes have a ‘dog’s dinner’ approach to Bruschetta presentation, shoving too much stuff on top. Some celebrity chefs, like Ottolenghi, also have a tendency to muck around with classic dishes. Keep it simple and authentic, especially if you happen to have top ingredients.
This tomato Bruschetta recipe is based on an old classic by Anna Del Conte.¹ The recipe serves 8 people. Halve or quarter according to your numbers.
6 sun ripened firm tomatoes, preferably Roma or Plum tomatoes
a handful of torn fresh basil leaves or a few pinches of freshly dried oregano
8 slices of good crusty bread, cut 1cm thick
4 garlic cloves, peeled and crushed
4 tablespoons extra virgin olive oil.
Blanch and skin the tomatoes, cut them in half and remove most of the seeds. Dice the flesh into 1.5 cm cubes. Tear the basil into small pieces, or if using dried oregano, strip from the stem and crush it finely in your hands.
Grill the bread on both sides then rub with the garlic. Cut each slice in half to make them easier to eat. ( or thirds, depending on the size of your slices).
Spoon on some tomato cubes and some torn basil over each slice and sprinkle with salt. Drizzle on the oil and serve at once.
Another approach is to mix the chopped tomatoes, chopped garlic, oil and dried oregano together and to let the mix steep for 10 minutes. Try it both ways and see which way you like it. The salt at the end brings out the flavour.

With the passing of time and the continuing changing of Neapolitan cuisine over the years, you can taste many versions dressed with pate or pesto of pepper ( Red capsicum), mushrooms, zucchini, small chunks of eggplant, mozzarella, scamorza and various salami. Again, use one seasonal ingredient or meat and keep the topping simple.

This recipe appeared as an antipasto in a summer luncheon for 8 people, and was followed by freshly made Tagliatelle with Mozzarella, Anchovy fillets and Parsley, a side dish of Pepperoni in Vinegar, and finished with Walnuts, Grapes and Parmesan. Traditional, classic food that is not over fiddly.
My Zucchini Festival continues today with another good zucchini pasta recipe ( see below) and a look at the seeds which produce this fecund vegetable. This year I planted two varieties of zucchini in my orto. The first to go in were the Black Jack variety, purchased as seedlings from a country market. They are the most common variety of zucchini grown in Australia, with vigorous, fast growing plants, high yields, and smooth dark green skin. Unfortunately for seed savers, they are also hybrids. The other variety, the Zucchino Striato d’Italia, or Italian striped zucchini, is easily grown from seed, and whilst not so prolific, which could be a good thing, they are definitely superior in taste and texture. An heirloom variety, this means you can save the seed for future plantings, a routine worth following when growing your own vegetables. The flavour is reminiscent of the zucchini grigliati we ate in the small trattorie in Trastevere, Roma. The other variety I’ve planted in the past is the yellow zucchini- a poor performer both in taste, yield and keeping quality, despite the lovely colour.
Today’s simple pasta dish marries Mafaldine pasta with small cubes of zucchini, saffron and cream. Mafaldine pasta is ribbon shaped pasta with curly edges and is also known as Reginette. The photos don’t do justice to the creaminess of this dish.
Mafaldine con Zucchini, Panna e Zafferano . Mafaldine Pasta with Zucchini, Cream and Saffron (for 2 medium serves)
180g mafaldine or other long ribbon egg pasta
2 small zucchini, cut into small cubes
1/2 small white onion, finely chopped
2 cloves garlic, finely chopped
2 Tablespoons olive oil
pinch dried chilli
generous pinch of saffron threads
1 cup cream
Bring ample salted water to the boil in a large pot.
Heat a large wide frying pan or non stick wok for the sauce. Add 2 tablespoons olive oil then the chopped onion and garlic. When softened, add the cubes of zucchini, some salt, and a pinch of dried chilli. Stir about and cook on low heat for around 20 minutes.
Add the Mafaldine ( or chosen pasta) to the boiling water and cook for the required time.
Use a little of the cooking water and add to the saffron to soften, then add this to the zucchini mixture. Add a cup of cream and raise the heat so that the cream thickens. Add more cream if necessary.
When the pasta is ready, drain and add to the zucchini cream sauce in the pan. Toss about. Save a little pasta cooking liquid to loosen the sauce, if necessary.
Serve with ample grated parmigiano cheese.
I enjoyed this dish on this cooler summer day. It will be included in my annual Zucchini Festival repertoire. It cost tuppence to make, allowing the splurge on a pinch or two of precious saffron pistils and a nice chunk of Reggiano Parmigiano cheese to serve.

Throughout Italy, various villages and towns hold an annual sagra or festival, very often dedicated to a specific locally grown or produced food, such as frogs, chestnuts or onions, or a local dish such as frico, polenta or risotto. A quick search of the various sagre in Italy will reveal many festivals devoted to pumpkin but not to zucchini. If you think about it, the pumpkin or Zucca is the Zucchino‘s much bigger sister. Orange versus green. Female versus male, fat and rounded versus thin and elongated. Anything you can do with a pumpkin can be adapted to the zucchino; stuff, fry, bake, layer, grate and soup them. Oh and pickle them too.
It’s high time to announce my own Zucchini Sagra. Come along and try my new zucchini recipes this month, or better still, suggest some more unusual ways of using this prolific garden beast.
My first recipe marries some young zucchini with prawns, spaghetti and mint in a rich sauce. The links at the bottom of this post will take you to some of my previous posts on this wonderful annual vegetable.
Spaghetti con Zucchini, Gamberi e Menta Serves four people.
Extra virgin olive oil
3-4 garlic cloves, finely chopped
2 small zucchini, halved lengthways then sliced in half moon rounds
pinch of crumbled dried chilli
2 anchovy fillets
100 ml dry white wine
40 gr butter
24 large uncooked green prawns
200 gr spaghetti ( see notes below)
16 or so mint leaves, torn
handful of flat parsley finely chopped
sea salt and black pepper
Bring a large pot of salted water to the boil.
Meanwhile add 2 tablespoons olive oil to a large non stick pan over medium heat. Add the garlic and saute for a couple of minutes. Add the zucchini and cook for 2- 3 minutes until coloured. Add the chilli and anchovies, squash them into the oil, then add the wine. Allow the wine to evaporate a little then add the butter. Bring to the boil for a minute or so, then add the prawns, stir about then remove from the heat.
Cook the spaghetti in the boiling salted water until al dente. Drain, then add to the prawns. Pop the pan over high heat, tossing and stirring to combine all the ingredients. Add the parsley and mint. As soon as the prawns are opaque, remove from the heat.
Season with salt and pepper and add a tablespoon of olive oil. Serve.
The amount of spaghetti specified in this recipe would be suitable for an entrée or light luncheon.
I would suggest adding more pasta to the pot, say, around 80 g per person, for a main meal, with a green salad on the side.
I also used a large non stick wok, which is a better utensil to hold the volume of ingredients for the final tossing.
The sauce, made up of oil, garlic, anchovy, wine and butter, is an excellent base for any marinara you might make.
This is a short post to let you know, dear friends and readers, that I have finally organised a Recipe Index. It is a work in progress. You’ll find it on the home page on the left hand side under the bicycle picture.
A few days ago, I made a batch of Sicilian Cherry and Chocolate Amaretti, (Amaretti di Cioccolato e Cilegie ). They disappeared too quickly: some were wrapped up and given away, others popped into our own merry mouths. Sicilian sweets taste so evocative, medieval and ancient. All the flavours of the island seem to be rolled up in these little festive biscuits- dried fruits and figs, orange and lemon peel, Marsala wine, Arabic spices, honey, almonds, pine nuts and pistachio, to name a just a few ingredients favoured by the Siciliani.
This year’s festive cooking is beginning to look like a cook’s tour around Sicily. Last week Siracusa, now today’s festive balls, Fior di Mandorle, a specialty of Agrigento. Come to Sicily with me this month as I delve into my collected recipes from each major town. Map provided, in aid of travel fantasy.
Fior di Mandorle. Almond pastrieswith honey and spice
200 g freshly ground almonds or almond meal
50 g/3 tablespoons of fragrant clear honey
100 g caster sugar
grated zest of 1 small organic orange
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1 large, or two very small beaten egg whites
1 teaspoon vanilla extract
icing/confectioners sugar for dusting
Preheat the oven to 150c.
Mix all the ingredients together, then knead until the oils from the almonds are released into the pastry.
Shape into smooth little cakes around 3 cm in diameter. Place onto a baking paper lined baking sheet and bake for 20 minutes.
Cool on a wire rack, then dust generously with icing sugar. Makes around 20.

My next Sicilian instalment will be Nucatoli, from Modica, which are similar to last year’s Cuddureddi, but come in an amazing shape.
I’m looking forward to a quiet, relaxing Christmas this year. During the weeks leading up to that day, I won’t be counting plates, cutlery, wine glasses, napkins, gutting rooms and borrowing chairs, moving furniture to make more room, ironing table cloths, emptying fridges, making lists and more lists, and anticipating an event for 29 or so guests. On the day, I may be sitting under a shady tree, eating some simply cooked fresh fish, followed by a few light biscotti, enjoying a conversation, good music, and a bottle of wine.
Despite this once in a lifetime opportunity, or escapist retreat, the making of festive delicacies is, for me, very much part of December and still continues. Last year I enjoyed making Cuddureddi, a spicy little Sicilian tart. They were eaten in the weeks leading up to Christmas day or were given away to friends. This year, I am looking to Sicily once again for inspiration. What could be more tempting than chocolate, almond and cherry biscotti, usually found in the pasticcerie in Siracusa, Sicily?
These little almond, cherry and chocolate bites can be thrown together very quickly and only take around 12 – 15 minutes to cook. They are soft centred, with the texture of a truffle more than a biscotto. They are gluten-free, dairy free and very moreish. Wrap a few in cellophane to give to your child’s favourite teacher, or give little gifts to loved ones during Advent. Dicembre e` un mese bellissimo, mentre il giorno di Natale puo` essere stressante!
Amaretti di Cioccolato e Ciliegia/ Chocolate cherry amaretti biscuits
250 g finely ground almonds
120 g caster sugar
50 g dark ( 70%) chocolate, grated
60 g dried sour cherries, chopped
finely grated zest of 1 lemon
2 extra-large egg whites, ( or three medium )
a pinch of salt
30 gr icing/confectioners’ sugar
Preheat the oven to 160 c.
Mix the almonds, sugar, chocolate, cherries and lemon zest together. Whisk the egg whites until firm and add to the almond mixture with the salt. Mix well. The mixture should be damp. ( Note- if you have used two egg whites and feel that the mixture needs a bit more moisture, beat another until stiff and add it to the mixture.)
Place the icing sugar in a bowl. Form balls with the almond mixture then roll them in the icing sugar. Place them on paper lined baking sheets.
Bake until they have a golden tinge, approximately 12- 15 minutes. Cool on a wire rack. Makes around 20 balls. Note, my edited pics make the balls look rather large but they only measure around 4 cm.

My best meals are usually spontaneous and unplanned. Ingredients present themselves from the Spring garden: I wander about, basket in hand, and pick a few likely candidates to make the Pasta Del Giorno ( pasta of the day) while Mr T digs out a cheap, light red wine, to go with it. He does most of the hard physical labour in the orto, carting wheelbarrows of compost about or making fences and mowing grass, so a proper lunch is in order most days. I add a few pantry staples and a new combination is born.
Today’s pasta takes around 20 minutes to prepare and cook. Meanwhile, have a munch on these radishes while I boil the pasta water.
Pasta del Giorno. Casarecce con bietola, acciughe, e ceci./ Casarecce pasta with silver beet, anchovies, and chickpeas for two or three people.
Recipe for two or three.
180 gr casarecce pasta ( I prefer De Cecco brand)
6 anchovy fillets in oil
2 large garlic cloves, finely chopped
2 tablespoons olive oil plus extra
a pinch of ground chilli flakes
4 medium-sized young silver beet leaves including stems.
a few tablespoons of chickpeas, well-drained, from a can. ( reserve the rest for another use)
more oil and parmigiano to serve
In a heavy based deep sided frying pan, add the oil and stir fry the garlic and anchovies together, mashing the anchovies as you go.
Add the chilli and finely shredded silver beet leaves, stirring well. Add a handful of chickpeas to the mixture. Turn heat down to very low or off until the pasta is ready.
Meanwhile cook the casarecce pasta in a large pot of salted water and as per packet directions. Keep a cup of the cooking water, then drain the pasta OR, simply scoop out the pasta with a large wire strainer and add to the frying pan of sauce. The second method retains enough liquid to loosen the sauce.
Turn heat to high, then toss around in the frying pan, distributing the ingredients well. Season with black pepper. Consider adding a little more oil or cooking water. Serve in hot bowls with grated parmigiano. Salute!
The Bossy Stuff or Basics for Beginners.
It is easy enough to create a nourishing and well-balanced pasta dish so long as a few basics are observed:
Start with a flavour base for your sauce. Each soffrito should match the ingredients and the season.
Don’t overload your pasta dish with too many ingredients. Choose around 2-3 main ingredients to star in the sauce.
Choose a pasta shape that will match or showcase your ingredients.
Consider how to make your sauce wet. Short, fat pasta shapes are hard to digest if the sauce is too dry.
Save some of the cooking water at the end to add to the sauce.
Add the pasta to the sauce, and toss around in a large pan. This technique guarantees that the sauce is well-distributed through the pasta, and reheats as well. ( Don’t serve the cooked pasta in a bowl and plonk the sauce on top. Aussie style, alla 1970s – very stodgy )
Time the cooking of the pasta and taste it for doneness. Al dente or to the tooth means a little undercooked and not too soft. Remember that the pasta will continue to cook when added to the sauce.
Always heat the serving plates. A good pasta meal can become instantly cold through the omission of this step.
Use large shallow bowls for serving. Large deep bowls are better for Asian noodle dishes. Small ‘old school’ bowls are good for breakfast cereal.
Spring is finally sending her beautiful vegetables from the garden to my kitchen. The first and most evocative of these is the artichoke. Carciofi, artichokes, are fiddly to prepare, requiring removal of most of their outer leaves while simultaneously bathing their cut bodies in acidulated water before they bruise and darken. It really is worth the effort.
I love carciofi gently braised with garlic, lots of good oil, a little water, a grind of salt, and handful of torn herbs, eaten straight out of the pot with some crusty bread. I love them creamed in a Spaghetti ai Carciofi, bringing back memories of tiny trattorie in Rome. I love them thinly sliced on a pizza. Mr T does not share my passion: there is something quite odd about that man, which was the subject of my very first post back in October, 2013.
So many of my artichokes now get the ART for Artichoke treatment because he won’t eat them and I can’t eat them all. This arty thing began in the 1990s when Daniella, the sister of a good friend, Sandro Donati, had a photographic exhibition featuring artichokes, beautiful black and white studies which included portraits of her mother: moody, melancholic, and molto Italiano. In that same year, I came across a book, with a forward by Lorenza de’ Medici, with stunning reproductions of works by Giovanna Garzani, ( 1600-1670), an artist who painted delicate still lives featuring fruit and vegetables. These two memories have influenced how I see vegetables. Why stick flowers in a vase when the garden is singing with other more spectacular stems? When I arrange and photograph artichokes, I am really lusting for their creamy bitterness in my mouth.
Other herbal candidates entering my kitchen are given the art treatment too. Broad beans in flower, over grown stems of celery, sage bushes flowering purple, stalks of dark rosemary: ‘There’s rosemary, that’s for remembrance. Pray you, love, remember.’ There are small tussie mussies of fragrant mixed herbs, bowls of lemons, fronds of wild fennel. Primavera nella mia cucina.
Sadly, I lost three hens to the foxes recently so we’re down to a dozen eggs a day. I sell a few here and there but always keep a basket of eggs in the kitchen, prompting a simple breakfast or a cake for someone. There is no need to refrigerate your eggs unless you plan to keep them for more than two weeks. I don’t clean the shells, if dirty, until I’m ready to use them. Cleaning eggs removes the natural protective layer, the cuticle or bloom from the shell, which preserves their freshness.
This month I have enjoyed researching the breads and sweets of Italy baked for the Day of the Dead, I Morti, on November 1/2. In Australia, Halloween was not celebrated until very recent times. Over the last 10 years, it has slipped into our language, led by commercial interests of course. The whole thing, in Australia at least, seems culturally artificial to me. I am now teaching my little ones about Celtic and Italian customs to counter the purple wigs and lolly bags entering their homes. They listen with wide-eyed wonder. Young Oliver leans in close and whispers ‘slipping through the crack of time’, though he turned up his nose at myFave dei Morti.
With all the bread I make, the little stove top griller pan with the heavy ridged lid, gets a constant workout. Stale sourdough comes to life when simply grilled and rubbed with garlic and dressed with new olive oil.
Australian Cobram Extra Virgin Olive oil is reliably good, winning prizes around the globe. Last May’s (2016) olive harvest and press has just hit the shelves. Look for harvest dates on your containers of oil. This information is more reliable than use- by-dates. The closer you are to the harvest date, the better the oil. Store large tins of oil in the dark. Decant the oil into clean pouring jars. When visiting an olive oil producer in Margaret River back in 2006, I was informed that adding lovely fresh oil to the oil that has been left in a pouring jar, even if only a few drops remain, tainted the fresh oil with already oxidised oil. Makes sense really.
Melbourne’s cold Spring has seen the return of the hearty soup to my kitchen. This thick meal in a bowl, Zuppa Frantoiana, is a soup which celebrates the first pressing of the season’s olive oil. The soup is layered with oil and grilled bread in a tureen before serving.
Speaking of Sandro, (see somewhere above), I’m including a little clip of one of his joyous Friulian songs. La Banda di Sandro blended traditional jazz with Italian folk sung in the Friulian dialect. Hey, just for fun, and just because I wish he and Judy were back in my kitchen; I know they would eat all the carciofi and then ask for more.

If you’re not Siciliani or Greek, you’re probably wondering what fave or broadbeans have to do with biscuits and the dead. Fave beans are the emblematic dish of death,
“The ancient Greeks saw the black spot on the petals of the broad bean plant as the stain of death and used the beans in funeral ceremonies but refused to eat them. Pythagoras thought that their hollow stems reached down into the earth to connect the living with the dead, and that therefore fave contain the souls of those who have died. The Romans honoured their connection with death but cooked and served the beans as the most sacred dish at funeral banquets.” ¹
The day of the dead, I Morti, is celebrated in Sicily on November 2 with FavedeiMorti, little sweet biscuits formed to look like broadbeans, as well as other sweets such as ossi da morto, bones of the dead, and sweets shaped like human figures. For many Siciliani, a tablecloth is laid out on the family tomb, complete with chrysanthemums, the flowers of the dead, and the family gathers for a picnic. This may sound rather morbid until you consider that on the day of the dead, I Morti, ancestors and relatives sneak back into the living world, back through that fissure in time, to be with the living again.
Given this fine Italian tradition ( not to mention its connection with similar Celtic practices), I went in search of a few customary and very simple recipes, from Siena to Sicily, to leave a few sweet things on the table or the grave, come November 1 and 2.
Fave Dei Morti
These tiny, crunchy biscuits are easy to whip up and are wonderful dunked in something strong. Despite their simplicity, they taste festive and are very moreish. I need to make another batch for the otherworldly ‘visitors’ on November 1.
100 gr almond meal ( or almonds finely ground to a powder)
100 gr sugar
grated zest of 1/2 lemon
1 Tbls rum
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
70 gr unbleached plain flour ( AP flour)
Place the ground almonds in a bowl with the sugar, lemon zest, egg and rum. Mix until well blended. Add the spices and flour and stir until the dough is well blended.
Divide the dough into four pieces. Flour a work surface very lightly and roll each piece into a log the width of a finger. Cut into 4 cm ( 1/12 inch) pieces and place them on a baking paper lined tray. Flatten each piece slightly.
Heat oven to 175ºC and bake until barely browned, around 16 minutes. Makes around 40 pieces. Dust with icing sugar and store well in a tin.
